Choosing more veggies
I’ve been trying to eat more veggies lately, so I love when I find something that is full of flavor and has lots of vegetables. I also love that this recipe can be made a few different ways.

If you are trying to follow a more low-carb, keto friendly diet, just eliminate the bread and serve this as lettuce wraps! And the best part it is easy to make too. When you’re hungry, you just want something yummy that gets on a plate quick. That’s why I love to make my barbecue chicken quesadillas too. So quick and easy!

Gather the ingredients
To start, you’ll gather these ingredients: romaine lettuce, carrots, sprouts, shrimp, a lime, bread (optional), parmesan cheese, and some basic kitchen spices that you will most likely already have.

This is such a great recipe to do in the height of summer when you have lots of options from your garden. You can substitute to a butter lettuce or whatever fresh variety you might be growing. Even if you are not a gardener, it is easy to enjoy fresh herbs in a container garden. They are easy to grow and being able to pluck fresh herbs to add to recipes is so fulfilling.

Preparing the shrimp
Let’s start by prepping the shrimp first. You’ll need to clean and peel them to start. You can even begin with pre-cooked shrimp (Trader Joe’s has great options in their frozen section) but you will need to be careful to not overcook them. You will mainly be warming them, and sauteing that spice flavor onto them.

Lightly saute the shrimp in the pan. If they are precooked, this time will be very short. Simply sear the flavors of the spices onto the shrimp and follow with the lime squeeze.

Remove the shrimp from the pan, and cook the shredded carrots in the pan in the oil and juices left behind. When they are tender, add the sesame seeds and remove from heat.

Bread or not to bread, that is the question
If using the bread, you can toast the bread right in the pan that you have been using. Make sure you toast both sides so it gets crispy. Otherwise, omit the bread and choose large and stable lettuce leaves to build the shrimp filling into.


Assembling the shrimp toasts
After choosing the base and which way you want to eat this, place the tender carrots on the lettuce and top with some parmesan cheese. Next, place a few shrimp on top and finish off with some sprouts.
If you like, add avocado, and a squeeze of lime juice. Eat and enjoy this nice, springy dish.

TOOLS YOU’LL NEED

Veggie Filled Shrimp Toast or Lettuce Wraps
Ingredients
- 4 Slices whole wheat bread or your favorite bread
- 10-12 Ounces uncooked large raw shrimp
- 2 large carrots shredded
- 4 romaine lettuce leaves
- ½ Cup sprout mix
- ½ Cup shredded parmesan cheese
- ½ lime
- 1 Tablespoon coconut oil or avocado oil
- ½ Teaspoon chili seasoning
- ½ Teaspoon fresh rosemary
- ½ Teaspoon cayenne pepper
- ½ Teaspoon smoked paprika
- ½ Teaspoon sesame seeds black or white
- ½ Teaspoon garlic powder
- kosher salt and pepper to taste
- 1/4 avocado cut into slices optional
Instructions
- Clean the shrimp, and peel if needed.
- Put the shrimp, chili seasoning, rosemary, cayenne, paprika, and garlic powder in a bowl. Mix to coat the spices on the shrimp.
- Heat the coconut oil in a pan.
- Add the shrimp and fry first on one side for 2-3 minutes, then on the other side or until golden. Do not overcook! Squeeze the juice of half a lime over the top of the shrimp. Set aside.
- In the same pan without changing the oil, add the shredded carrots.
- Saute for 5-6 minutes. Add the sesame seeds and stir.
- Remove the carrots from the pan and place into a bowl. Set aside.
- Toast the bread slices on both sides in the heated pan, or in a toaster, if you are using. You can also omit the bread, and only use the lettuce as the base.
- Choose the four freshest, and most stable green leaves from the romaine lettuce and place one on top of each toast. Or if not using bread, this will be the base.
- Add the carrots, followed by a sprinkle of parmesan cheese. Salt and pepper to taste.
- Top with shrimp, and end with a sprinkling of sprouts. Enjoy!
- As an option, a slice of avocado can be added for extra flavor.
